Here we are again, just over a month after bottling the bottles of the future sparkling wine of Trebbiano Spoletino lie quietly in the cellar, even if some have opened due to the high pressure or the imperfect closure of the cork, we can say that the work it was well done, the refermentation in the bottle took place! Soon, we will make the transfer to the other warehouse where it will rest for a long time and where the remuage that is, the rotation of the bottles to put the yeasts in suspension and thus complete the maturation process of the sparkling wine.
