We were beginning to understand that Trebbiano Spoletino was such a versatile grape and after having vinified it for a few years, we embarked on the road of bubbles.
2018 was the year of the turning point, if Charmat sparkling wine was the main project, producing a sparkling white Ancestral Method represented an intriguing bet.

So we decided to venture into this new challenge: to harvest Trebbiano Spoletino in advance of its classic maturation, to obtain a fresh wine, perfect for becoming sparkling.
The first production was really a test; we didn't know what we were going to meet but the usual passion and determination did the rest.

We decided to bottle only 220 bottles while the wine was about to finish its fermentation. I still remember that day with the whole family taking to cork those precious bottles. Crown cap and rest in the cellar for the long winter months with the yeasts left inside to do their job; that is, to create that fine and effervescent bubble, typical of the ancestral method.

Spring 2019 was moderately hot but that was enough, inside the cellar, where those 220 bottles rested, due to the activity of the yeasts that "eating" the residual sugar, developed that bubble that had been in mind for some time.

There was only one problem: we hadn't thought about his name yet. The inspiration did not come, we wanted originality; the distinctive sign of that product.
And this came on a warm morning like a glow: without uncertainty. That new sparkling would be called “Lo Spettinato”!

Spettinato because it is a young, lively, exuberant wine with the typical character of youth.
Spettinato because the word, inside, contains the French name "Pet Nat" (pétillant naturel) which indicates the sparkling wines of the ancestral method.
In general, because it "dishevels"; its varietal aromas and its freshness accompanied by the effervescent bubble, never invasive, which strikes you and invites you to take a new sip.

Consistent with the name, we have chosen a cheeky label: the wine logo is Aeolus, God of the wind, with its ruffled tuft that blows bubbles! All printed on natural paper reminiscent of wrapping paper and the crown cap that fortifies the image of the drinkable wine, simple but not trivial.

The disheveled gives its best as an aperitif, combined with simple fish dishes, fried food and ham.
Divine with pizza and also with a tasty cut of exotic fruit.
