The day of bottling is one of those long-awaited in cellar life.
It is a little bit the culmination of the work and sacrifices made in the vineyard, during the harvest and in the cellar.
If we want to make a comparison, it is like raising your children, watching them grow and then letting them go but continuing to follow them, carefully, as they grow.
The previous days we live them with frenzied rhythms and multiple thoughts. The wines are prepared, the bottles and corks are checked and the day is organized down to the smallest detail.
It is also one of the few days during the year where the entire Colle Uncinano team gathers and so the day, even if tiring and demanding, becomes a great opportunity to be together and get along even more.
We rely on one of our historical partners who, through a mobile system installed in a truck, is able to fill thousands of bottles in the space of a day in conditions of maximum hygiene and safety.
There is a great deal of attention on the part of all of us combined with the right amount of tension to ensure that everything runs smoothly and there are no complications that could compromise the evolution of the wine in the bottle.
This is how the barrels are emptied and the filled bottles laid down, layer by layer, horizontally to then start their rest and slow aging in glass which will guarantee the qualitative growth of that precious nectar which is now fully part of our life!
