The goal we want to achieve is very simple: to let all people, especially those who have not been lucky enough to be born in the countryside like us, know how precious are the fruits that man "snatches from Nature". In fact, Nature keeps waiting.
To obtain even the humblest and most spontaneous fruit, man must work hard, know how to wait, tame, adapt to climatic conditions... nothing is taken for granted.
Let alone to obtain a product such as wine, which must be refined, bottled and must maintain, for years, all those characteristics of excellence that express its territorial identity.
Therefore, our project is ambitious: to tell, through the pages of this diary, how a wine is born starting from a vineyard that still has to be planted.
The vine then is a challenge in itself. It is called Trebbiano Spoletino and is a white bunch that until a few years ago was in danger of disappearing from the winemaking tradition of our region, Umbria. Unfortunately, this generous white vine, which is able to give wines with red characteristics, does not yet generate any kind of feeling or attention in the people who hear it mentioned. Our personal opinion is that perhaps it is often confused with other Trebbiani used to produce grapes with high yield and poor quality.
Instead, we believe in the modest nobility of Trebbiano Spoletino, in the mineral strength of our land and in the ability to recognize the excellence of those who sincerely appreciate well made and genuine wine…
And Save the Last Grape it is the window that we leave open on our cellar, on our wonderful Umbria, and on our best food and wine traditions for all those who want to take a look at what is happening in our area.
