Here we are again in documenting a very important phase of our Trebbiano Spoletino production, the early harvest for the production of sparkling wine. Normally, the harvest phase for this vine, as we have seen in previous posts, takes place in mid-October, a period in which it reaches its complete sugar and polyphenolic ripeness. In this case, however, by checking the potential alcohol content of the grapes with the refractometer, it was decided to harvest on September 4th, because in order to make sparkling wine with the classic method, first its base must be created, i.e. wine with high acidity. and a low alcohol content, otherwise in the re-fermentation in the bottle we will have alcoholic degrees too high for this type of wine. Therefore, wake up early in the morning and with a beautiful day we went to our vineyard, armed with a tractor and baskets for the manual and selected harvesting of the grapes. It was not easy to actually collect, in fact, as you can see from the photos, the clusters are very tight and often grew close to the twigs, incorporating them and making it difficult to untangle the cluster itself. Apart from that, it was an opportunity to gather the whole family together and spend a day in complete harmony with nature, gossiping a bit!
