The versatility of this vine allows us to also make the sparkling variant, which in my opinion is perfectly suited for this purpose. At this point, after waiting almost a year from the harvest of the wine destined for sparkling, it is time to add the liqueur de tirage and bottle by hand of course. The corking takes place with special metal caps also called crowns which act as a temporary seal for the next 3, 4 or 5 years so that the complete maturation of the wine is not reached in contact with the yeasts. For those who still don't know what it was liqueur de tirage, it represents nothing more than a blend of a little wine, grape sugar and yeasts that are added to the total mass after being activated. Then, having prepared the liquer de tirage, added to the wine and stirring the entire mass, we proceeded with manual bottling. Well now we just have to wait for the yeasts to do their job ... or at least I hope!
